I don’t think I ever realized there were so many special days set aside to honor particular foods. As it turns out, today is National Chocolate Chip Day! I have to thank to wonderful world of Twitter for alerting me to these very special occasions! Out of all of the foods that deserve a holiday, I would say the chocolate chip is definitely one of them. They’re not only for cookies after all! Soda Bread & Smoked Salmon

I’m feeling inspired by St. Patrick’s Day, so I went on the hunt for some traditional Irish faire. Irish Soda Bread immediately came to mind. I found this great healthy recipe for Soda Bread that pairs perfectly with smoked salmon, which is apparently quite popular in Ireland. The result? Delicious!

Lexi’s Thai Style Green Curry Coconut Shrimp

I’ve been hearing some great things about ”Lexi’s Rocking Healthy Army for 2012.” I’m so inspired by their efforts to maintain healthy lifestyles in the new year! It is important to remember that eating healthy doesn’t mean you need to sacrifice flavor! I love to eat yummy food:) This recipe is a great example of a flavorful dish that is low in calories, fat, and carbs and high in protein!
Lexi’s Thai Style Green Curry Coconut Shrimp
Ingredients:
1 tsp organic extra virgin olive oil
1/2 cup chopped pineapple
1 tsp Sriracha Chili sauce
1 tsp paprika
4 small scallions, whites and greens separated, chopped
1 tbsp Thai Kitchen Curry Green Paste
2 (or 4, depending on your love:) cloves garlic, minced
1 lb shrimp (or for a veggie substitute, try some chopped tofu!), peeled and deveined
8 oz light coconut milk
2 tsp Thai fish sauce (this is truly a favorite ingredient of mine!)
1 tbsp fresh mint, chopped
2 tbsp fresh basil, chopped
Preparation
In a large nonstick skillet or wok, heat oil on medium-high flame. Add scallion whites, paprika, and green curry paste and sauté for one minute.Add shrimp , pineapple, Sriracha Chili Sauce, and garlic and salt to taste. Cook for about 2-3 minutes.Next add coconut milk, fish sauce and mix well; simmer about 2-3 minutes, or until shrimp is cooked.Remove from heat, add green scallion, mint, and basil.And voila!I like to serve this over some fresh greens or rice which are, or course, naturallylow-fat. Feel free to try it over brown rice or your favorite noodles as well!
